Yummy Vegan/Gluten-free eatin'

I was so busy yesterday and didn’t have time to post anything but I did take some pics of some of the delicious, vegan, gluten-free food I have been eating the last couple days.

I would love to share some recipes, but I am not sure if it’s okay to share recipes I get from other sources.  Does anybody know? Well, I will post as much info I can about each pic and if you happen to know the recipe sharing laws, or if you have any questions about the following dishes, please let me know!

Quinia Stuffed Peppers – Vegetarian Times (click on image to see the original recipe)

I made this for dinner last night. It’s a quinoa stuffing for peppers. The recipe calls for pepper jack cheese, which acts as a binder and adds flavor, but this still tastes really good without the cheese. My kids don’t like their peppers cooked, so I cut up raw peppers and serve them on the side.

I have made this recipe for years for my family and friends and they are so delicious! They are better than any pancake I have ever had!  I replaced the all-purpose flour with gluten free multi-purpose flour and they actually tasted even better!

Gluten Free Pancake Mix – King Arthur Brand

My picky 8 year old daughter is the one exception to the “everyone loves my buckwheat pancake” rule.  She spotted a box of King Arthurs Gluten-free pancake mix at Whole Foods and I bought it. When I got home, I realized that the recipe called for eggs and milk, which I just replaced with almond milk and egg-replacer mix. My daughter was a satisfied customer!!!

Rice Pilaf – The Kind Diet

For lunch today I had the most amazing rice pilaf. I got the recipe from Alicia Silverstones “The Kind Diet. I love everything I have ever made in that book. This is one of my favorites!

Guacamole and Corn Chips

And finally, I made some guacamole for a snack! I don’t think I got my recipe from any copy-written source. I basically mix 3 Haas avocados, a bunch of chopped up cilantro, lime juice, 1-2 minced garlic cloves, 1/2 minced red onion, some salt and cumin! You could also throw some jalapeno in there, but I was trying to be nice and share with the kiddos.

So that’s about it so far! 2nd day into my vegan/gluten-free adventure and I’m eating like a queen. I have been posting these pics on my Instagram account to show my friends that not only am I not depriving myself or my family, but I am eating really really well!

Good morning!

Coffee-Mate-Vanilla-Caramel-Cream-laden coffee in hand, I thought I would start this post early today! I am looking forward to a time when I have given up this evil chemical I so depend on. I don’t even want to look right now at all the unknown ingredients in this coffee creamer! I know they are bad! One step at a time, right?

I find it ironic that my coffee of choice this morning,  an extra bold Sumatran Reserve Fair Trade Certified™ Organic, comes in a plastic, non-recyclable K-cup. Is someone missing the point somewhere? Ah, well, one step at a time for all of us, even Keurig!

Hey, just more motivation to give up my morning caffeine addiction!

Anyway, I started this blog a couple days ago because I love writing and I thought that a blog would help me stay focused on my goal of changing my eating habits. I was so stoked yesterday to get my first follower! Jeff from “Vegan for a Year” stopped by to like one of my posts and so I headed over to his blog.  I was happy to find a fellow newbie and a humorous honest blogger! I so look forward to keeping up with your vegan adventure, Jeff!

I have such a great admiration for people who take change into their own hands instead of taking the easy way out! I firmly believe that good things happen with hard work. I don’t believe in luck or fate. We all have different circumstances and struggles, even when it seems that some have things easier than others. If you don’t like something about your life, do what you can to change it. As I searched for recipes yesterday, I found other inspiring bloggers like Somer from Vedged Out! Wow girl! Your story is so inspiring! Thank you so much for sharing it!

I also found a great post that will make my first week of going Vegan Gluten Free that much easier!  Angela, at Oh She Glows, created a 5 day lunch plan that is not only Vegan and Gluten-Free, but it looks absolutely delicious! She makes it so easy by providing easy printing for each day. I printed these out and will make my shopping list based on these recipes and head out to Whole Foods later today.You should definitely check out her lunch plan if you are looking for ideas to get started!

So today I will start by finishing up my 5 day vegan/gluten-free menu, and then I can’t wait to head out to shop and see what other options are available!
