Health Goals for this week!

I have made a list of new goals for 2013 but I think when it really comes down to it, I am still a huge fan of the weekly resolutions!

They are much more attainable and with weekly goals, I am much more inclined to check in and reassess.

With that being said, here are my happy healthy goals for the week of January 21, 2013

Diet Goals:

No refined sugars or artificial sweeteners,

No wheat.

No dairy.

No coffee creamer which for me, means no coffee.

Lots of water, veggies and fruits!

Fitness Goals:

My Cleveland 1/2 Marathon training does not officially start until February 11th, but I am training for the Chili Bowl Classic 5k on February 16. I have never done official training for a 5k, yet, I’m always disappointed when I don’t improve my time. This race is usually a very cold, sometimes icy race, so I’m not looking to PR, but I would like to do my best.  My training so far for it has been on the weak side, so for the remaining 4 weeks, I am going to be more vigilant about my training (find a training schedule today!)

I would also like to start incorporating some core strengthening to my workouts. I know I need it but I am not excited about it. My goal for this week is to do the P90X Ab Ripper X 3 times this week.

To blog or not to blog!!!

My poor new blog has been neglected. I want so much to write and I have so many things I have to write about, but I need to make some time to do this! I also hate the look of the blog, but that also requires time.

I just had to write this to get the ball rolling.

This weekend I will be busy (what’s new?!) but I will find time to work on the 2013 goals (currently in limbo), and a schedule, which will include time for writing and time for training!

Hopefully, I will find more time to do what I really want to be doing!

Just a quickie!

I have been spending way too much time this morning setting up my new Twitter account (@healthynewyear)  and reading other runners tweets and now I don’t have much time to say much.

In a nutshell, I was on blogging hiatus over the holidays while I spent time with friends and family and tried to figure out what direction I am going to go with my fitness and health goals for 2013.

I am happy to say that I ate really well and have learned from a book I read over the break called “Wheat Belly”, and from experience, that avoiding wheat really has a LOT of perks!

I am also seriously ready to commit to my health!

I will talk more about that and my other goals soon.

Yummy Vegan/Gluten-free eatin'

I was so busy yesterday and didn’t have time to post anything but I did take some pics of some of the delicious, vegan, gluten-free food I have been eating the last couple days.

I would love to share some recipes, but I am not sure if it’s okay to share recipes I get from other sources.  Does anybody know? Well, I will post as much info I can about each pic and if you happen to know the recipe sharing laws, or if you have any questions about the following dishes, please let me know!


Quinia Stuffed Peppers – Vegetarian Times (click on image to see the original recipe)

I made this for dinner last night. It’s a quinoa stuffing for peppers. The recipe calls for pepper jack cheese, which acts as a binder and adds flavor, but this still tastes really good without the cheese. My kids don’t like their peppers cooked, so I cut up raw peppers and serve them on the side.

Banana Pecan Buckwheat Pancakes – Vegetarian Times (click on image to see original recipe).

I have made this recipe for years for my family and friends and they are so delicious! They are better than any pancake I have ever had!  I replaced the all-purpose flour with gluten free multi-purpose flour and they actually tasted even better!


Gluten Free Pancake Mix – King Arthur Brand

My picky 8 year old daughter is the one exception to the “everyone loves my buckwheat pancake” rule.  She spotted a box of King Arthurs Gluten-free pancake mix at Whole Foods and I bought it. When I got home, I realized that the recipe called for eggs and milk, which I just replaced with almond milk and egg-replacer mix. My daughter was a satisfied customer!!!

Rice Pilaf – The Kind Diet

For lunch today I had the most amazing rice pilaf. I got the recipe from Alicia Silverstones “The Kind Diet. I love everything I have ever made in that book. This is one of my favorites!


Guacamole and Corn Chips

And finally, I made some guacamole for a snack! I don’t think I got my recipe from any copy-written source. I basically mix 3 Haas avocados, a bunch of chopped up cilantro, lime juice, 1-2 minced garlic cloves, 1/2 minced red onion, some salt and cumin! You could also throw some jalapeno in there, but I was trying to be nice and share with the kiddos.

So that’s about it so far! 2nd day into my vegan/gluten-free adventure and I’m eating like a queen. I have been posting these pics on my Instagram account to show my friends that not only am I not depriving myself or my family, but I am eating really really well!


Steady as she goes…. making progress!

Good morning!

Coffee-Mate-Vanilla-Caramel-Cream-laden coffee in hand, I thought I would start this post early today! I am looking forward to a time when I have given up this evil chemical I so depend on. I don’t even want to look right now at all the unknown ingredients in this coffee creamer! I know they are bad! One step at a time, right?

I find it ironic that my coffee of choice this morning,  an extra bold Sumatran Reserve Fair Trade Certified™ Organic, comes in a plastic, non-recyclable K-cup. Is someone missing the point somewhere? Ah, well, one step at a time for all of us, even Keurig!

Hey, just more motivation to give up my morning caffeine addiction!

Anyway, I started this blog a couple days ago because I love writing and I thought that a blog would help me stay focused on my goal of changing my eating habits. I was so stoked yesterday to get my first follower! Jeff from “Vegan for a Year” stopped by to like one of my posts and so I headed over to his blog.  I was happy to find a fellow newbie and a humorous honest blogger! I so look forward to keeping up with your vegan adventure, Jeff!

I have such a great admiration for people who take change into their own hands instead of taking the easy way out! I firmly believe that good things happen with hard work. I don’t believe in luck or fate. We all have different circumstances and struggles, even when it seems that some have things easier than others. If you don’t like something about your life, do what you can to change it. As I searched for recipes yesterday, I found other inspiring bloggers like Somer from Vedged Out! Wow girl! Your story is so inspiring! Thank you so much for sharing it!

I also found a great post that will make my first week of going Vegan Gluten Free that much easier!  Angela, at Oh She Glows, created a 5 day lunch plan that is not only Vegan and Gluten-Free, but it looks absolutely delicious! She makes it so easy by providing easy printing for each day. I printed these out and will make my shopping list based on these recipes and head out to Whole Foods later today.You should definitely check out her lunch plan if you are looking for ideas to get started!

So today I will start by finishing up my 5 day vegan/gluten-free menu, and then I can’t wait to head out to shop and see what other options are available!

Day Number 2

Well,hello there!

I want to start this post by saying, I just finished off a chicken bacon swiss sandwich, an order of onion rings and a junior peppermint shake from Arbys.

Gross, right?

Well, I sure feel pretty gross right now!

Ready for my excuse?

I still haven’t gone shopping because I want to make sure I have at least a somewhat healthy menu for the upcoming week, and because I had no lunch food in the house, and I can’t make a menu on an empty stomach,  I ran over to the quickest, albeit, far from the best, solution!

I’m not going to sit here and beat myself up for it! (My stomach is already doing that!) The fact is, I’m no longer hungry and I’m ready to sit down again and work on this menu. Yesterday, I found some good breakfast ideas on Elana’s Pantry and I added the link to the blogroll and printed some of her recipes, but I still need some dinner and lunch ideas. I also have the Crazy Sexy Kitchen. I am now going to sit down with those, and a few other sources I found online and work on this menu.


Getting Started with the Crazy Sexy Diet!

My family and I tried a vegan lifestyle for about 6 months, about 2 years ago, and we really liked it.  I think when people hear “vegan” right away they groan at the idea of eating tofu and Boca burgers every day.  Well, we tried it and we discovered there are so many delicious foods we were missing out on! A vegan diet can be so delicious if, like anything, you have the right recipes. It can also make you feel so much healthier!

The problem I had was that I was only slightly informed, despite all the books I read. Making sure you are getting the proper nutrition can be very overwhelming, no matter what diet you embark on.  Were we getting all the nutrients and vitamins our bodies needed? You know you can be vegan by eating nothing but Oreo cookies?  Also, despite what some may have you believe, cooking vegan meals does take more time, unless you are eating premade veggie burgers every day, which I would NOT recommend.  Fresh is best!

The other problem I had is that we have a few picky eaters in our midst who don’t like certain foods, such as mushrooms.  Trying to come up with a delicious menu with such limited choices can be really daunting and time consuming and I know I don’t have hours to be searching through recipes.

I’m the primary chef in the household, and as my schedule got busier, I found it increasingly difficult to come up with healthy vegan meals, and we gradually found ourselves back in a carnivorous way of eating.

I have always had the goal of returning to the vegan diet. I know that time is required to make this happen and though my time is a rare commodity, my family’s health is a high priority to me!

I knew that reading about healthy lifestyles is always very motivating, so I picked up a new book by Kris Carr, called the Crazy Sexy Diet!

I read through it pretty quickly, as I do with most books, anxious to get started.  I learned so much from this book that I’m excited to try to incorporate it into our every day life.  This book gets into a lot more than a vegan lifestyle. It also suggests trying a gluten-free diet to see if it makes a difference. (While you may not have a serious gluten intolerance such as celiacs, your body still may have some issues with it.) It also talks a lot about a diet that will encourage an alkaline body versus an acidic one.

The book was very motivating, as I had hoped, but now that I’m done with it, I don’t really know where to begin.  This is not the fault of the book. It’s just that it’s such a new way of eating for me.  I have my huge binder of tried and true recipes, and I’m pretty sure, every recipe in there contains meat, gluten or dairy.

When you aren’t used to cutting all those things out of your diet, it can be overwhelming! What do I eat? Will it taste good?

I decided to start this online journal as I journey into this new way of eating. It’s not as easy as picking up a book and making all the recipes in it. (By the way, I also picked up the Crazy Sexy Kitchen by Kris Carr, which also has a lot of information and yummy looking recipes. I haven’t even read through that one yet, but I already love that she labels her recipes as gluten-free, kid-friendly, how easy and quick they are, soy-free, and raw.) I won’t be sharing any of her copy-written recipes or ideas here, but I will share links to other sites I find helpful along the way.

So that’s about it for now.  I am going to spend the morning trying to come up with a weeks worth of vegan gluten-free meals and I’ll let you know how it goes. I really would like to start tomorrow (Monday) but I’m also realistic that changes like this do take a little time to adjust to.
